Extra Virgin Olive Oil is obtained exclusively by cold pressing
The olive Seggianese (olivastra Seggianese) is only found in some inland areas of the provinces of Grosseto and Siena, mainly on the Grosseto side of Mount Amiata and grows at about 500-600 meters above sea level. The main features of our extra-virgin oil, exclusively obtained by cold pressing, have a low acidity, a high content of unsaturated fatty acids, a long shelf life for the presence of many antioxidants. The color is golden-green, mildly fruity with a lingering aftertaste that is characteristically spicy and slightly bitter.
The Pachamama Farm has existed as such since 2009. Although the farm has never been cultivated with any treatment that was not strictly organic, we are awaiting organic certification. We have already applied for membership to the Consortium of Extra Virgin oil D.O.P. (original protected name??) of Seggiano.

Extra-old Modena Balsamic Vinegar
Our 3-quality (what does this mean?) balsamic vinegar is produced from 3 different batteries in our “acetaia” in the village of Castelvetro, Modena. Production takes place exclusively with the traditional method, from the cooked must of Trebbiano grapes from the Castelvetro hills. Our vinegars, now aged 42, 30 and 18 years, participate each June with excellent results in the contest of St. John of the Traditional Balsamic Vinegar of Modena. A small part of the older vinegar finishes its maturation in a barrel made of juniper wood. This produces a delicious product sought by the most discerning palates; it is exceptional as a condiment on roasted beef.

Chestnuts and Marrons
Chestnut of Mount Amiata is the name of an Italian fruit submitted to a Protected Geographical Indication. The production area is the west area of Monte Amiata and, in particular, the municipalities of Arcidosso, Castel del Piano, Santa Fiora and Seggiano and part of the municipalities of Cinigiano and Roccalbegna. The cultivation of the Mount Amiata chestnuts has always enjoyed success, thanks to favorable climatic conditions, so that already in the statutes of the fourteenth century Amiata communities had specific standards for the protection and use of chestnut trees, concerning the fruit as well the wood. The importance of this crop was motivated by the fact that the chestnut has long been almost the only source of food for the mountain people at certain times of the year. The cultivation differs in 3 main types of chestnut: marron, the red bastard and the Cecio. The gathering is done by hand or by suitable mechanical means, so as to safeguard the product.
